First of all I must apologize for being so late with my response.

I have been very kindly nominated for the Versatile Blogger Award by ¨Mary Ann¨. Her blog Not the Family Business is delightful, so pleasure go and check it out.

Not the Family Business!

It´s a great feeling to know there are people who enjoy my little spot on the web. Thank you very much Mary Ann to have nominated me.

Now I´m supposed to share 7 random things about myself.

  1. I like to sleep with socks on even at summer time.
  2. Music is part of my life, I sleep and wake up listening to it, I also like to spend time making a playlist albums .
  3. I´m addicted to cheese, milk, yoghourt and chocolate. For lonely nights a glass of red wine and chocolate  is a perfect combination ;)
  4. I squeeze lemon juice in almost all my soups, I love the taste of it ;)
  5. I´m very romantic person, I´m  still waiting for my Prince and I always cry during movies.
  6. I like very much aquatic sports like water skiing, windsurf and my next challenge is paddle surf.
  7. When I´m stressed I love to cook a good meal  while listening to music and  enjoying a glass of a very good red wine as (Rioja, Ribera del Duero or Berberana from Spain) . I don´t like to share my kitchen when I´m cooking and I don´t like  help neither.

Adventure in Spain with Lia!

Last
summer a very dear friend came from Brazil to visit me, it was her
first time in (Spain)&t=h” target=”_blank” rel=”geolocation”>Spain and we decided to go on a
 trip  by train just like old times.
Lia used to be my room-mate long time
ago when both of us were trying to have our university degrees at
USC in Bauru/São Paulo. We shared a lot of great times,  good
memories…….. Lia for me is like an
angel she is always around when I most need and last summer she
came once more to save me from the unhappy life I was living. I
just have to say : ¨thank you my dearest  Lia to be my special
and wonderful friend.¨
I don´t need words to
express… I don´t need tears to shed… I don´t need to ask for a
smile… or a hand to hold me… All I need is to be your friend,
forever!     Hard times don´t last forever, but
true friendships do…… I´ll always be there, for anything you
need…. Even if is just someone to listen.

Our
trip started in Madrid, after (Barcelona)&t=h” target=”_blank” rel=”geolocation”>Barcelona, (Girona)&t=h” target=”_blank” rel=”geolocation”>Gerona, (Andorra)&t=h” target=”_blank” rel=”geolocation”>Andorra( border with Spain) and
finished where I used to live before (Valencia%2C%20Spain)&t=h” target=”_blank” rel=”geolocation”>Valencia. It was awesome! As we have
so many pictures I choose a few and today I ´ll start with Madrid.
Madrid the cosmopolitan (Madrid)&t=h” target=”_blank” rel=”geolocation”>capital
of Spain
is a vibrant metropolis with much to see and
experience. It is a city of great monuments and very interesting
nightlife.

Smoked salmon Frittata – This is a simple recipe but exquisite! For a special Brunch with a glass of mimosa, even better!

serves 6

Ingredients

  • 200 g clean button mushrooms, chopped
  • 1 small onion, chopped
  • 120 g smoked salmon, chopped
  • 2 tomatoes, chopped
  • 1 tbsp fresh chopped parsley
  • 8 eggs white ( I use just eggs white for my diet based on protein for build muscles)
  • salt and fresh ground black pepper
  • 1 tsp cayenne pepper
  • 1 tsp dried oregano
  • 100 ml semi-skinned milk
  • 1 tbsp  parmesan cheese grated
  • 1-2 tbsp  butter

Method

  1. Preheat oven to 180 º C , 360 ºF.
  2. Grease an oven proof dish.
  3. Heat the butter in a large sauce pan and fry the onions for few minutes or until transparent, add the mushrooms and cook for more few minutes until soft, add the chopped tomatoes and season to taste.
  4. Whisk the eggs white with milk, add cayenne pepper, oregano, parley, parmesan cheese, salt and pepper and pour over the mushrooms and add the smoked salmon to the mixture.
  5. Cook for 20 mins, or until the frittata  is set and light golden brown.

Frittata com salmão defumado, simples e delicioso, para uma ocasião especial servido com uma taça de mimosa (Champagne com suco de laranja) ainda melhor!

Ingredientes para 6 pessoas

  • 200 g de champignones frescos, picados
  • 1 cebola pequena, picada
  • 2 tomates, picados
  • 120 g salmão defumado, picado
  • 100 ml de leite semi-desnatado
  • 1 colher (chá) parmesão ralado
  • 8 claras de ovo ( eu uso somente claras pela minha dieta a base de proteinas) pode usar o ovo inteiro.
  • 1 colher (café) pimenta calabresa
  • 1 colher (chá) salsinha, picada
  • 1 colher (café) orégano
  • sal e pimenta negra em grão moída
  • 2 colheres (sopa) manteiga

Modo de preparar

  1. Pré aqueça o forno a 180 º C.
  2. Untar uma forma com manteiga.
  3. Aquecer a manteiga e refogar a cebola por alguns minutos o até estar transparente, adicionar os champignones e refogar por mais alguns minutos ou até estarem cozidos, temperar e reservar.
  4. Bater as claras de ovos com o leite, adicionar a pimenta calabresa, oregano, queijo parmesão, salsinha , sal e pimenta negra em grão moída.
  5. Adicionar o salmão defumado e misturar com o champignon.
  6. Levar ao forno e assar  por 20 minutos ou até ficar ligeiramente dourada.

Frittata con salmon ahumado, sencilla e exquisita! Para un almuerzo especial con una taza de mimosa (cava con zumo de naranja) aun mejor!

Ingredientes para 6 personas

  • 200 g de champiñones limpios, troceados
  • 1 cebolla pequeña, troceada
  • 2 tomates, troceados
  • 8 claras de huevos ( yo utilizo sólo claras por mi dieta a base de proteínas)
  • 120 g salmon ahumado, en tiritas finas
  • 100 ml leche semi-desnatada
  • 1 cuchara de perejil, picado
  • 1 cucharadita de pimentón picante
  • 1 cucharadita de oregano
  • 1 cuchara de queso parmesano
  • sal y pimenta negra en grano molida
  • 2 cucharas de mantequilla

Preparación

  1. Pré-calentar el horno a 180 ºC.
  2. Untar una cazuela con mantequilla.
  3. En una sartén calentar la mantequilla e rehogar la cebolla hasta que se quede transparente, añadir los champiñones e rehogar por mas algunos minutos y sazonar.
  4. Batir las claras de huevo con el leche, añadir el queso parmesano, el perejil, el oregano, el pimentón picante, sal y pimienta.
  5. Mezclar con los champiñones y levar al horno por 20 minutos o hasta que esté ligeramente dorada.

serves 6 (small portions)

Ingredients

  • 1/2 onion, chopped
  • 2 tbsp olive oil
  • 2 carrots, chopped
  • 1/2 courgette, chopped
  • 1 celery steak, chopped
  • 200 ml low fat single cream
  • 1 egg
  • 100 ml white wine
  • 1 tsp mix herbs
  • paprika
  • salt and ground black pepper

Method

  1. Pre-heat oven 180 ºC,  360ºF.
  2. Grease 6 individuals mousse cups.
  3. Over low heat sweat the onion until they are transparent, add the carrot , courgette and celery and sweat with the white wine until they are soft.
  4. Season to taste with mix herbs, paprika, salt and black ground pepper.
  5. Whisk the egg with the single cream and mix well with the vegetables.
  6. Liquidize the mixture.
  7. Pour the mixture into 6 individuals  mousse cups.
  8. Cook for 30 minutes or until set.
  9. Serves cold or warm.

Delicioso flan de verduras.

Ingredientes para 6 pessoas (porções pequenas)

  • 1/2 cebola ,picada
  • 2 colheres (sopa) azeite de oliva
  • 2 cenouras, picadas
  • 1/2 abobrinha, picada
  • 1 raminha de aipo, picada
  • 1 ovo
  • 100 vinho branco
  • 200 ml de creme de leite light
  • 1 colher (café) ervas aromáticas
  • paprika ou pimenta calabresa
  • sal e pimenta negra em grão moída

Modo de preparar

  1. Aquecer o forno a 180 ºC.
  2. Untar 6 moldes de flan.
  3. Em fogo médio refogar a cebola até que esteja transparente.
  4. Acrescentar a cenoura, o apio, a abobrinha junto com o vinho branco até estarem cozidos.
  5. Temperar com as ervas aromáticas, paprica, sal e pimenta negra em grão moída.
  6. Bater o ovo com o creme de leite e misturar junto com as verduras.
  7. Bater tudo no liquidificador até ficar cremoso.
  8. Despejar nos moldes de flan e levar ao forno por 30 minutos.
  9. Servir quente ou frio.

Ingredientes para 6 personas (pequeñas porciones)

  • 1/2 cebolla, troceada
  • 2 cucharadas de aceite
  • 2 zanahorias, troceadas
  • 1/2 calabacín, troceado
  • 1 ramita de apio, troceada
  • 1 huevo
  • 100 ml nata liquida  ligera
  • 1 cucharada de hierbas aromáticas picadas
  • pimentón picante
  • sal y pimienta negra en grano molida

Modo de preparo

  1. Precalentar el horno a 180ªC.
  2. Untar con aceite 6 moldes individuales.
  3. Sofreír la cebolla en una sartén hasta que esté transparente. Agregar la zanahoria, el calabacín y el apio, remover y seguir la cocción hasta que estén tiernos.
  4. Salpimentar.
  5. Batir el huevo con la nata y mezclar con las verduras, añadir las hierbas aromáticas y triturar con la batidora hasta reducirlo a un puré fino.
  6. Rellenar los 6 moldes individuales y hornear por 30 minutos.
  7. Servir caliente o frío.

This is a super soup healthy and delicious,¨ Carrot and orange Soup¨, a great combination, have it hot in the winter or cold in the summer.

serves 6

Ingredients

  • 1 onion, chopped
  • 700 g carrots, finely sliced
  • 2 tbsp olive oil
  • 1200 ml vegetable stock
  • 2 -3 large onions
  • salt and freshly ground black pepper
  • 1 tsp ground mace
  • few fresh basil sprigs or coriander

Method

  1. Heat the oil in a large pan, then sauté the chopped onion and slides carrot for 5 minutes.
  2. Add the vegetable stock with basil or coriander to the pan, then bring to the boil, cover and simmer.
  3. Scrub and dry one of the oranges, then, using a zester, carefully remove the rind in long thin strips.
  4. Discard basil sprigs, place the cooled carrot mixture in a  liquidizer and blend to a smooth purée.
  5. Return soup to the rinsed pan and add the grated rind from the remaining orange together with seasoning.
  6. Heat the soup, add orange juice through a strainer. Cook gently, until hot, then serve.

Deliciosa sopa de cenoura e laranja, pode servir tanto fria no verão como quente no inverno!

serve 6

Ingredientes

  • 1 cebola, bem picada
  • 700 gr de cenoura, cortada em rodelas finas
  • 1200 ml de caldo de verduras
  • 3 colheres (sopa) azeite de oliva
  • 2-3 laranjas
  • sal e pimenta negra moída
  • noz- moscada
  • um pouco de manjericão ou coentro fresco

Modo de preparo

  1. Em fogo médio refogar a cebola e a cenoura por 5 minutos.
  2. Acrescentar o caldo de verduras as folhas de manjericão ou coentro e continuar refogando até que as verduras estejam cozidas.
  3. Lavar bem uma laranja e quitar a pele e cortar en tiritas finas.
  4. Retirar as folhas de manjericão ou coentro da soupa e bater no liquidificador até ficar cremosa.
  5. Voltar a panela, acrescentar o suco de laranja e a pele, temperar com sal, pimenta e noz-moscada.
  6. Aquecer, e servir!

Saborosa crema de naranja con zanahorias, servir fría no verano o caliente en el inverno!

Ingredientes

  • 1 cebolla, troceada
  • 700 g zanahorias, troceadas
  • 2 cucharadas de aceite de oliva
  • 1200 ml caldo de verduras
  • algunas hojas frescas de albahaca o cilantro
  • sal y pimienta negra en grano molida
  • una cucharada de ralladura de naranja
  • nuez-moscada

Preparación

  1. En una cacerola sofreímos la cebolla y la zanahoria por 5 minutos.
  2. A continuación añadimos el caldo de verduras y las albahacas o cilantro y dejamos cocinar en fuego medio hasta que las verduras estén cocidas. Quitar las hojas de albahaca o cilantro.
  3. Triturar todo en un vaso batidor hasta que se queden como una crema.
  4. Regresar al fuego, añadir el zumo y  la ralladura de la naranja, salpimentar y añadir a nuez-moscada.
  5. Pasar todo por un chino y cocer a fuego lento.
  6. Puedes servirlo caliente o refrigerarlo y servilo frío.

Ingredients

  • 9 sun-dried tomatoes, sliced
  • 1-2 tbsp raisins
  • 1 tbsp oats
  • 1 tbsp sesame seeds
  • 1/2 tsp sugar
  • 1tsp salt
  • 100 ml olive oil
  • 100 ml skimmed milk
  • 180 g wheat flour
  • 1 tbsp baking powder
  • 3 eggs
  • 150 g goat or feta cheese, in cubes
  • 1/2 leek, finely sliced
  • 1 small aubergine, in cubes
  • ground black pepper
  • thyme

Method

  1. Pre-heat oven 180 C, 360 F.
  2. Grease the tin with margarine and pour some flour all around the tin.
  3. Sift flour into a bowl with the salt, sugar and baking power.
  4. Whisk the eggs, add the milk and oil and mix very well.
  5. Add the black ground pepper and thyme to taste.
  6. Place the mixture into the flour and beat well all the ingredients together, add the raisins, sun-dried tomatoes, sesame seeds, oat , vegetables and cheese, mix well.
  7. Place the mixture into a cake tin and bake for about 40 minutes, or until a skewer inserted into the centre comes out clean.
  8. Remove from the oven and leave to cool in the tin.

Delicioso bolo salgado com verduras e queijo de cabra ou queijo (Grego) feta.

Ingredientes

  • 9 tomates secos picados
  • 1-2 colheres (sopa) uvas passas
  • 1 colher (sopa) aveia
  • 1 colher (sopa) gergelim
  • 3 ovos
  • 100 ml azeite de oliva
  • 100 ml de leite desnatado
  • 180 g de farinha de trigo integral
  • 1 beringela pequena em cubos
  • 1 alho poró picado
  • 1 colher cheia (sopa) fermento em pó
  • 1/2 colher (chá) açúcar
  • 1 colher (chá) sal
  • pimenta negra em grão moída
  • tomilho seco
  • 150g de queijo de cabra ou feta em cubinhos

Modo de preparo

  1. Pré aqueça o forno a 180 C.
  2. Untar uma forma com margarina e polvilhar farinha.
  3. Peneirar a farinha com o sal, o açúcar e o fermento em pó.
  4. Bata os ovos, acrescentar o leite e o azeite, misturar bem, acrescentar a farinha aos poucos até formar uma massa homogênea, colocar a aveia, o gergelim, os tomates seco, as uvas passas, as verduras, o queijo, o tomilho e a pimenta em grão moída, misturar tudo muito bem.
  5. Despejar a mistura sobre a forma e levar ao forno por aproximadamente 40 minutos.
  6. Retirar, deixar esfriar e servir.

  • 9 tomates secos troceados
  • 1-2 cucharas de pasa sultana sin semilla
  • 100 ml de aceite de oliva
  • 100 ml de leche desnatada
  • 180 g harina integral
  • 3 huevos
  • 1 sobre de levedura en polvo
  • 1 cuchara de avena
  • 1 cuchara de semillas de sésamo
  • 1/2 cucharadita de azúcar
  • 1 cucharadita de sal
  • pimienta negra en grano molida
  • tomillo
  • 150 g de queso de cabra o queso feta en dados
  • 1/2 puerro troceado
  • 1 berenjena pequeña en dados

Preparación

  1. Precalentar el horno a 180 C.
  2. Untar un molde con margarina e espolvorear harina.
  3. En un bol batimos los huevos junto con la leche y el aceite.
  4. Tamizamos la harina, el azúcar, la sal y mezclamos con los huevos.
  5. Añadir la avena, las semillas de sésamo, las verduras, el tomate seco, las verduras, el tomillo la pimienta en grano molida, las uvas pasa y el queso, mezclar bien.
  6. Verter esta preparación en el molde y hornear durante 40 minutos, o hacer un agujero con un palillo en el centro de la tarta y el palillo esté completamente limpio.
  7. Dejar enfriar y retirar del molde.
